Korean BBQ Chicken

Do you love sweet, savoury, sour and salty? Then this recipe will eat your heart out and incorporates all these flavours in one dish! It’s so easy to prepare that you’ll even be able to make it with three kids running around the kitchen! Marinate it the night before and it’ll be ready to throw on the grill the next day or just marinate it 2 hours in advance for that deeper flavour.  

Korean Style BBQ Chicken

The other name of this recipe is called Dak Bulgolgi. In the Korean language, ‘Dak’ means chicken and Bulgolgi means ‘fire meat’.  The main ingredients in this recipe include Soy, Ginger and Garlic along with other condiments you’ll see below. I like to use boneless chicken thigh or breast as it’ll be the quickest to cook, but I also sometimes like to use the chicken thigh with the bone as I feel it gives that added chicken flavour.

Here are the main ingredients used for the marinade. You can vary the quantities accordingly depending on how sweet, salty or spicy you like it. All these ingredients are easy to find in your local supermarket.

If you’re making this with the bone in, the quickest way to prepare this dish is to put the chicken in the oven first and par cook it for 20 mins. Afterwards, put it on the charcoal grill to get that added smokey flavour. This way you’ll be sure that the heat has transferred all the way into the bone.

Ingredients

  • 1 kg Chicken Thighs
  • 2 tbsp Soy Sauce
  • 1 tsp Brown Sugar
  • 1 tsp Honey
  • 1 tsp Sesame Oil
  • 1 tsp Grated Ginger
  • 1 tbsp Chopped Garlic
  • 1/2 tsp Black pepper
  • 1 tbsp Korean Pepper Paste (Gochujang)
  • 1 tsp Sesame seeds
  • sprinkle Chopped Parsley
  • 1 tbsp Rice wine Vinegar
  • 1 tsp Lemon

Instructions

  • Combine the ginger, garlic, Korean pepper paste, soy sauce, brown sugar, honey, sesame oil, pepper, rice wine vinegar, and lemon
  • Add the mix to the chicken and marinate in the fridge for 2 hours. The longer the better. If you don't have time, 30 mins will still be ok.
  • 15 mins before cooking, light up your charcoal.
  • Once charcoal has turned white, tip in into the grill and place grill plate on top.
  • Add the chicken to the grill and baste it with the remaining sauce.
  • Turn the chicken a few times to avoid burning.
  • After 20-25 mins of cooking remove from the grill
  • Transfer to a plate and sprinkle with sesame seeds and parsley
